Fody’s Low-FODMAP Ground Beef & Potato Stew Recipe
Want a gut-friendly shortcut to a classic? This Ground Beef & Potato Stew is a comforting and super simple gut-friendly dish to warm you up when it’s chilly outside! It has all the flavor of traditional beef stew, but it won’t leave you feeling bloated or uncomfortable after eating. This hearty low-FODMAP stew can also simmer on the stove while you prepare the flavorful salad, which brings lots of zest to this meal thanks to Fody’s Caesar dressing.
Ingredients for Fody’s Ground Beef & Potato Stew
- 2 tbsp Fody’s Garlic Infused Olive Oil
- 1 lb. 93% lean ground beef
- 1 ½ pounds potatoes, peeled and diced in 2cm cubes
- 3 medium carrots, thinly sliced into rounds
- 2 celery stalks, thinly sliced
- 4 cups water prepared with Fody’s Chicken Soup Base
- 2/3 cup Fody’s Unsweetened Ketchup
- ½ tsp kosher salt
- ½ tsp black pepper
- 2 tsp Italian seasoning
- 2 tbsp cornstarch + 3 tbsp water, whisked together
- 1 tbsp Worcestershire sauce
Salad
- 5 oz. arugula
- ½ cup diced tomatoes
- 4 oz. sliced mushrooms
- 1/3 cup Fody’s Caesar Dressing
Directions for Fody’s Ground Beef & Potato Stew
- To start your hearty low-FODMAP stew: to a large skillet with a lid, add garlic oil and heat on medium. Once the pan is hot, add the ground beef. Cook for 5 to 7 minutes, stirring occasionally and breaking up the beef into small, bite-sized pieces. Add the potatoes, carrots, celery, prepared chicken soup base, ketchup, salt, pepper, and Fody’s Italian seasoning. Stir and cover, bringing to a simmer.
- Cook for 15-20 minutes, stirring occasionally, or until the vegetables are tender. Add cornstarch mixture and Worcestershire sauce, stir, and continue to simmer uncovered for another 4-5 minutes.
- Meanwhile, to make the salad, add greens, tomatoes, and mushrooms to a large mixing bowl. Top with Fody’s Caesar dressing.
