Fody’s Maple BBQ Chicken Quesadillas
These Maple BBQ Chicken Quesadillas are not only quick and easy, but they’re bursting with delicious bbq flavor. With creamy avocado and bright, fresh veggies, they’re certainly a keeper!
Ingredients for Fody’s Maple BBQ Chicken Quesadillas
- 2 tbsp Fody’s Garlic Infused Olive Oil
- 2 cups pulled rotisserie chicken
- 2 tsp Fody’s Everyday Seasoning
- Dash kosher salt
- ¾ cup Fody’s Maple BBQ
- ½ green bell pepper, finely chopped
- ½ cup cooked corn
- ½ cup diced roma tomato
- 1 ½ cups shredded cheddar cheese
- 4 gluten-free tortillas
- ½ avocado, mashed or sliced
- 2 tbsp cilantro, finely chopped
Directions for Fody’s Maple BBQ Chicken Quesadillas
In a large pan on medium heat, add garlic oil. Once hot, add chicken, everyday seasoning, dash of salt, and most of maple bbq (reserve some for serving). Stir until heated, transfer chicken to a plate. Rinse and dry the pan.
Heat the pan over medium heat, and spray with cooking spray. Place a tortilla in the pan, top with chicken, bell pepper, corn, tomato, and cheese on a half of the tortilla (you’ll repeat this for all 4 tortillas). Fold the other half over top. Cook on medium-low heat, for 3 min per side or until desired crispness. Serve topped with avocado and cilantro.
