Revisiting the Gut Friendly Garden: What to Do With Your Fresh Veggies!

Too much fresh produce? It’s a great problem to have! If your gut friendly garden is bursting with more gorgeous fruits and veggies than you could possibly eat, here’s your no-waste guide to using up every delicious morsel, long past the end of summer.

Eat your gut-friendly garden every day!

Eating your veggies is a no-brainer; how to eat them is a different story altogether. If you’re at your wits’ end with salads, it’s time to get creative and integrate your bounty into some no-bloat recipes you can enjoy right into the fall.

Get creative with pizza

Pizza purists, avert your eyes (though we’re definitely not weighing in on pineapple)! There are tons of ways to enjoy leafy produce on pizza, no matter how you like it. Check out this chopped italian salad flatbread recipe for inspiration integrating leafy greens; you can use cooked kale as a rich, earthy topping, or top a baked pizza with fresh arugula and a drizzle of low-FODMAP flavored olive oil for a restaurant-worthy pie!

Salad (yes, yes, we know!)

You may be sick of salad, but the question is, what does salad mean to you? Check out these four ways to make better salads for a rundown on how to break the iceberg-lettuce-and-chopped-tomato rut, and re-imagine the possibilities with new and unusual mixes you can get straight from your garden.

Spread the wealth

Give amazing gifts to friends and family! Delicious staples like zucchini are known for bearing fruit faster than gardeners can eat them, and tomatoes tend to all get ripe at the same time. If you’re giving your gut friendly garden produce to a friend, you don’t just have to show up with an armload of tomatoes (although we’re sure this would be a hit, too!)

Do some of the prep-work

Remember those spiralized zucchini? You can prep ahead of time to give your friends easy-to-use consumable gifts they’ll love. Our advice? Ditch the Tupperware and give prepped ingredients in mason jars for easy refrigeration and a trendy look. You can also put a few ingredients together in a larger container for a pre-made salad and a fantastic gift. Fody’s tip: If you opt for a pre-made salad, be sure to bring the vinaigrette or dressing on the side to avoid wilting or soaking your greens.

Bake it up ahead of time

What’s more welcome than showing up with some bloat-free baked goods? If you don’t want to be rushing around on the day of a visit, get the prep done ahead of time and freeze your creations. Zucchini bread and zucchini cakes are great options; alternatively, you can try integrating fruits and berries into homemade cobbler, or even muffins. Fody’s tip: Make sure you fully defrost your offerings before heading over!

Preserve your gut friendly garden bounty!

Finally, there’s preserving. From dehydrating herbs to fermenting and canning your gut friendly garden produce, the sky’s the limit for preparing delicious ingredients you can enjoy right into the winter months. Go nuts with homemade pickles, kimchi and sauerkraut that you and your gut can enjoy any time, or make your own tomato sauce! Check out this article for fermentation inspiration that will up your preserving game and make sure you’ve got access to probiotics all year round. Whatever you decide to grow in your gut friendly garden, there’s a way to enjoy it, a way to preserve it, and a way to share it!
